Coconut Yogurt with raspberry chia jam, berries and buckwheat granola
I recently discovered coconut yogurt! The coconut flavour is very mild (despite my expectations), it is super creamy and not sour at all. I personally do not like diary yogurts that are very sour, so I preferred soy yogurt for some time now. Nevertheless, coconut yogurt is without a doubt the most delicious yogurt I ever had.
I truly hope it will get more popular in Germany. As far as I know you can currently get just one brand (Harvest moon) in health food stores only and it’s pretty expensive compared to other plant based yogurts. However, as a special treat every now and then it’s absolutely fabulous!
Coconut yogurt is full of healthy fats, rich in antioxidants and contains lots of fibre. It is a fantastic dairy alternative for vegans, those who are lactose intolerant or who want to cut out soy products.
When I bought coconut yogurt for the first time I was not sure what to eat with it. So I had a look at the fridge and came up with a combination of raspberry chia jam and fresh berries. The fruity jam and berries complement the creamy coconut yogurt very well and topped with some crunchy buckwheat granola it makes a delicious treat. I mostly have it for breakfast or as a snack but nicely layered in a glass it even looks fancy as a dessert. Coconut yogurt tastes also great when stirred into your overnight oats.
Have you ever tried coconut yogurt? I also saw a few recipes of making your own, I want to try that soon. If you have any recommendations on that or know some other available brands in Germany, I’d love to hear.
- 125g coconut yoghurt (I used the natural one of harvest moon)
- 2 tbs raspberry chia jam
- 1 handful of blueberries
- 2-3 strawberries
- 2 tbs buckwheat granola (recipe will follow, feel free to use any granola you like)
- Divide your coconut yogurt between two glasses.
- Top each with one tablespoon of raspberry chia seed jam and carefully spread it to the sides.
- Slice strawberries and place them on the sides of your glass.
- Top with blueberries and granola. Dig in and enjoy!
