Avocado Nectarine Salad
As summer is quickly approaching its end (at least in Germany), I want to share another one of my favourite summer salads with you.
It truly reminds me of summer, because the first time I got to try it was on holiday in spain. As you might assume it is no typical spanish dish. In fact I ate it at the birthday party of some German friends who have a holiday house in Cadaqués. This small village is truly picturesque, lying in between the mountains at the Costa Brava coast. The famous artist Salvadore Dali lived there for most of his life and I can absolutely understand why. You can even visit his house, that is a museum nowadays and it’s stunning.
My family has a holiday house in Empuriabrava, which is a lovely village too, crossed by many canals. However, Cadaqués has a very special charm and each vacation I try to spend at least one day there. Whenever you are at the Costa Brava, make sure to visit Cadaqués, it`s just beautiful.
Back to the recipe – that was when I first tried the avocado nectarine salad and I loved it so much that I had to recreate it instantly at home. I am a huge avocado lover, so I am always keen to try new combinations with it. The fruitiness of ripe nectarines paired with creamy avocado and fresh basil make it the perfect summer salad.
It is essential that both the nectarine and the avocado are ripe and soft, otherwise it won’t be as tasty. I haven’t tried it yet, but I’m sure that it will be delicious with peach instead of nectarine, too. For the dressing you just add a drizzle of olive oil, white balsamic vinegar and honey to enhance the flavours.
It tastes amazing just like this, but you can also add some crumbled feta and roasted pine nuts for a more filling version.
Avocados are incredibly nutritious as they are loaded with vitamins, potassium, minerals and fiber. Even though it is a high fat fruit, these fats count to the healthy ones, as they are reducing inflammation and protecting the heart. Nectarines are great sources of beta-carotene, vitamin C, and lutein – nutrients that offer enormous benefits. They enhance immunity, protect vision, help improve skin health and may prevent numerous deadly diseases.
Finally basil is rich in antioxidants as it balances the free radicals in your body and it has great antibacterial properties that protect you from harmful bacteria.
I hope you love the salad and get to enjoy it as long as nectarines are still in season! 🙂
