Summer rolls with two dips

I know the end of summer is close but these summer rolls are great in any season. 

In the evenings I like to have something for dinner that I don’t feel too full or uncomfortable afterwards and with these summer rolls my tummy always feels great. They are very satisfying but in a light way.
They make an easy and quick lunch or dinner as they require just a few minutes of preparation. I love about them that you can vary the filling with everything you have on hand. Most of the things that are required for this recipe are my basics I always have at home. So all you need to do is chop up some veggies, while frying the tofu, whip up two dips and you’re ready to roll. 

The first dip – which is my absolute favourite – is made out of unsweetened peanut butter, lime juice, maple syrup, soy sauce and a bit of warm water. It is the perfect match to those summer rolls that are filled with crispy carrot, creamy avocado, juicy cucumber, hearty sesame tofu and fresh herbs.

The second dip is for all garlic lovers: Fresh garlic is combined with fish sauce, lime juice, maple syrup, soy sauce and chili. I like to add both into my rolls but basically one dip is enough 😉

You can easily find rice paper and fish sauce in asian food stores or some well sorted supermarkets.

My basic filling consists of three parts:

Veggies + protein + fresh herbs

My go to veggies are:  

  • Carrots
  • Cucumber
  • Avocado
  • Romain lettuce

For protein I use:

  • Sesame fried nut tofu
  • Prawns

The herbs I like most in the filling are:

  • Fresh mint 
  • Fresh cilantro

I sometimes like to add some roasted peanuts, soybean sprouts and rice noodles.

Summer rolls make an easy and quick lunch or dinner as they require just a few minutes of preparation. All you need to do is chop up some veggies, while frying the tofu, whip up two dips and you're ready to roll.

For the summer rolls
  1. 6-8 rice papers
  2. 1 avocado
  3. 2 carrots
  4. 1/4 cucumber
  5. 1 small romain lettuce (optional)
  6. 1 handful fresh mint*
  7. 1 handful fresh cilantro
  8. prawns**
  9. 1 handful of roasted peanuts (optional)
  10. 1 handful of soybean sprouts (optional)
  11. rice noodles (optional)
For the tofu
  1. 100g nut tofu (or normal tofu)
  2. 1 tsp sesame oil
  3. 1 tbs soy sauce
  4. 1 tbs sesame seeds (I use black sesame)
Peanut lime dip
  1. juice of 1 lime
  2. 3 tbs unsweetened peanut butter***
  3. 1 tbs soy sauce
  4. 1,5 tbs maple syrup
  5. 2 tbs warm water
Chili garlic dip
  1. 2 tbs fish sauce****
  2. 1 tbs soy sauce
  3. 1 garlic clove (crushed)
  4. 1/2-1 tsp chili flakes
  5. 1 tbs maple syrup
  6. juice of one lime
For the tofu
  1. Cut tofu into 0,5cm thick slices.
  2. Heat a pan with sesame oil and fry tofu for a few minutes until golden brown.
  3. Flip tofu and add soy sauce. Sprinkle with sesame seeds for the last bit of frying.
For the dips
  1. Just combine all ingredients in a bowl. Use a whisk for mixing the peanut lime dip.
  2. Let sit for a few minutes to enhance the flavours.
For the summer rolls
  1. Shortly dip rice paper into a bowl of water (a few seconds are enough, it gets soft very quickly).
  2. Put all your ingredients in the middle, top with a tablespoon of one or even both dips and fold like a tortilla wrap. Enjoy!
Notes
  1. * you do not necessarily need both mint and cilantro, I often use just one sort of herbs.
  2. ** the quantity depends on the size. You can either use precooked prawns which you find in the refigerated section of your supermarket and use them as they are. Or if you buy fresh or frozen raw prawns, fry them in a pan with a little sesame oil and add them warm to your filling.
